The Agate "Eyes" as they are called are polished - the rest is left Natural.  The Amethyst grows around the Agate which forms a matrix of sorts.

Amethyst is a violet variety of quartz and is often used in jewelry. The name comes from the Ancient Greek ἀ a- ("not") and μέθυστος méthystos ("intoxicated"), a reference to the belief that the stone protected its owner from drunkenness.
